Scotch Eggs

[Ingredients]

  • 280g minced pork

  • 4 hard-boiled egg - peeled

  • 1 small stalk spring onion - chopped

  • 1/4 carrot - peeled and chopped

  • 1tsp sesame oil

  • 1tbsp light soy sauce

  • 1tbsp sugar

  • 1tbsp cornstarch + extra for coating

  • 1/2tsp salt

  • 1/2tsp fivespice powder

  • 2 eggs - beaten, for coating

  • Panko breadcrumbs - for coating

[Steps]

  1. Place meat in a mixing bowl and hit it against the bowl until meat sticks to bowl.

  2. Add in spring onion, carrot, sesame oil, soy sauce, sugar, starch, salt, fivespice, and mix well. Divide mixture into 4 portions.

  3. Coat each egg with starch, make sure eggs are dry.

  4. Using a cling wrap, wrap each portion of meat around an egg. Make sure that the egg is fully covered.

  5. Coat meat with starch, followed by egg and lastly breadcrumbs. Be very gently as the meat tends to fall off the egg.

  6. Preheat oil and deep fry eggs until golden brown over low fire.

  7. Drain on paper towels and let cool completely.

  8. Slice each egg into half and serve.
