[Ingredients]
6 eggs
3tbsp cold butter
1-2tbsp creme fraiche
Salt and pepper
Chopped chives/spring onion
[Steps]
Break eggs into a pan and add in butter.
Place pan over low heat and stir continuously using a rubber spatula. Keep stirring until mixture begins to set, abt 4-5mins.
Do not let pan get too hot, keep moving the pan off and on the heat. When egg starts to become semi-solid, add in creme fraiche, mix well, followed by chives/spring onion, mix well.
Serve egg on top of toasted bread.
