Asian Scotch Eggs


[Ingredients]

  • 4 eggs - boiled and peeled

  • 2 cloves garlic - crushed

  • 1/2 cup chopped onions

  • 2tsp cooking oil

  • 350g minced pork

  • 1/2 cup chopped carrots

  • 2tbsp chopped spring onion

  • 2tbsp soy sauce

  • 1tbsp sherry

  • 1 1/2tbsp brown sugar

  • 1/2tsp salt

  • 1/2tsp fivespice

  • 1/4tsp black pepper

  • 1tbsp cornstarch + extra

  • 2 eggs - beaten

  • 1/2 cup panko breadcrumbs

[Steps]

  1. Microwave garlic and onion with 2tsp oil, covered on high for 2mins. Let cool.

  2. Mix pork, carrot, spring onion, soy sauce, sherry, brown sugar, salt, fivespice, black pepper and starch together. Add in cooled garlic and onion and mix thoroughly until fully incorporated. Set aside 20mins.

  3. Divide meat mixture into 4 portions and wrap each portion of meat around a starch-coated egg, using a cling wrap to help shape it.

  4. Coat egg in starch, followed by egg and lastly breadcrumbs. Deep fry eggs for 10mins until nicely browned, crisped and cooked thru.

  5. Serve hot.
