Watermelon Arugula Feta Salad


[Ingredients]

  • 3 cups seedless watermelon - cubed, chilled

  • 1/2 cup crumbled feta cheese

  • 7oz arugula

  • 1/4 small red onion - thinly sliced

  • 2tbsp balsamic vinegar

  • 2tbsp extra virgin olive oil

  • Salt and pepper

[Steps]

  1. Wash and spin-dry arugula.

  2. Whisk vinegar, oil, salt and pepper. Toss arugula in vinaigrette.

  3. Toss in remaining ingredients and serve.
