[Ingredients]
3 cups seedless watermelon - cubed, chilled
1/2 cup crumbled feta cheese
7oz arugula
1/4 small red onion - thinly sliced
2tbsp balsamic vinegar
2tbsp extra virgin olive oil
Salt and pepper
[Steps]
Wash and spin-dry arugula.
Whisk vinegar, oil, salt and pepper. Toss arugula in vinaigrette.
Toss in remaining ingredients and serve.
