[Ingredients]
1/4 Cup Chopped Red Onion
Juice of 2 Small Limes
1tsp Olive Oil
1lb Peeled and Deveined Cooked Shrimp
1 Diced Avocado
1 Cup Diced English Cucumber
1 Deseeded and Minced Serrano Pepper
2tbsp Chopped Cilantro + extra to garnish
Salt and Black Pepper
1 Lime - cut into wedges - to serve
2 1/4 Cup Shredded Iceberg Lettuce
[Steps]
Combine onion, lime juice, olive oil, pinch of salt and pepper together. Let marinade for 5mins.
In another bowl, combine shrimp, avocado, tomato, cucumber and serrano paper together. Add in cilantro and toss gently. Adjust seasoning with salt and pepper.
Fill 9 martini glasses with shredded lettuce. Top each with 1/2 cup salad and garnish with a sprig of cilantro and lime wedge.
