Roast Duck


[Ingredients A]

  • 1 1.5kg duck

[Ingredients B]

  • 1tsp sea salt

  • 1tsp ground star anise

  • 1 1/2tsp ground salted brown beans

[Ingredients C]

  • 1/4tsp sea salt + 1tbsp Chinese wine - mix together

[Ingredients D]

  • 1tsp light soy sauce + 2tbsp honey + 50ml water - mix together

[Steps]

  • Clean duck and pour hot water over and inside of duck. Drain dry.

  • Rub the inside of duck with B and sew up the gap using thread and needle.

  • Rub outside of duck with C.

  • Hang duck up to dry completely, about 3hrs.

  • Preheat oven 200degC and roast duck for 10mins, on a tray/rack.

  • Remove duck from oven and brush skin with D and return to roast for another 1 1/2hrs or until fully cooked.

  • Every 15mins intervals, do two things. 1) turn the duck and 2) brush skin with D.

  • Remove thread from duck.
