[Ingredients A]
1 1.5kg duck
[Ingredients B]
1tsp sea salt
1tsp ground star anise
1 1/2tsp ground salted brown beans
[Ingredients C]
1/4tsp sea salt + 1tbsp Chinese wine - mix together
[Ingredients D]
1tsp light soy sauce + 2tbsp honey + 50ml water - mix together
[Steps]
Clean duck and pour hot water over and inside of duck. Drain dry.
Rub the inside of duck with B and sew up the gap using thread and needle.
Rub outside of duck with C.
Hang duck up to dry completely, about 3hrs.
Preheat oven 200degC and roast duck for 10mins, on a tray/rack.
Remove duck from oven and brush skin with D and return to roast for another 1 1/2hrs or until fully cooked.
Every 15mins intervals, do two things. 1) turn the duck and 2) brush skin with D.
Remove thread from duck.
