[Ingredients]
1/2tbsp oil
1 diced green onion
2tsp peeled and finely chopped ginger
1/2 deseeded and cut medium red capsicum
1/2 deseeded and cut medium green capsicum
1/2 deseeded and cut medium yellow capsicum
60g cut into bite sized boneless skinless chicken breast
black pepper
1tbsp soy sauce
[Steps]
Heat oil in a frying pan over medium heat. Add onion and ginger, stir fry for 1 to 2mins.
Turn heat to highest and add capsicums, stir fry. Sprinkle in some salt - draws moisture out from vege, allowing them to cook faster.
When capsicums are cooked, push it to sides of pan and add chicken. Leave for a few mins then turn over to cook the other side. Stir everything together, add pepper and soy sauce.
Place chicken on a refrigerated plate so it cools down faster.
