Pepper Fried Chicken

[Ingredients]

  • 1/2tbsp oil

  • 1 diced green onion

  • 2tsp peeled and finely chopped ginger

  • 1/2 deseeded and cut medium red capsicum

  • 1/2 deseeded and cut medium green capsicum

  • 1/2 deseeded and cut medium yellow capsicum

  • 60g cut into bite sized boneless skinless chicken breast

  • black pepper

  • 1tbsp soy sauce

[Steps]

  1. Heat oil in a frying pan over medium heat. Add onion and ginger, stir fry for 1 to 2mins.

  2. Turn heat to highest and add capsicums, stir fry. Sprinkle in some salt - draws moisture out from vege, allowing them to cook faster.

  3. When capsicums are cooked, push it to sides of pan and add chicken. Leave for a few mins then turn over to cook the other side. Stir everything together, add pepper and soy sauce.

  4. Place chicken on a refrigerated plate so it cools down faster.
