[Ingredients]
1lb chicken breast, sliced into 1/2 inch strips
Olive Oil
1 yellow capsicum
1 red capsicum
1 medium onion - thinly sliced
1 packet Mrs. Dash Fajita Seasoning Mix
Corn or flour tortillas
1/4 cup water
[Guacamole]
2-3 ripe avocados
1tbsp lemon juice (adjust to taste)
Garlic salt
Cherry tomatoes - quartered
Yellow onion - finely diced
[Steps]
Fajita: Heat a good splash of olive oil in a large skillet.
Add chicken, cook for 3mins until slightly browned. Remove from skillet.
In the same skillet, heat another good splash of olive oil. Add onion and capsicum, cook 3-5mins.
Return chicken to skillet. Stir in water and Mrs. Dash® Fajita Seasoning. Cook for 5mins until heated through.
Guacamole: Cut avocados in half lengthwise. Scoop out flesh and discard seed.
Mash avocado with lemon juice. Season to taste with salt and pepper. Mix in onion and sliced tomatoes.
Spoon fajita into warm tortillas and top with guacamole.
