Baked Chicken Parmesan

[Ingredients]

  • 2 Chicken Breast - sliced into 4 pieces each

  • 3/4 Cup Seasoned Breadcrumbs

  • 1/4 Cup Grated Parmesan

  • 2tbsp Melted Butter

  • 3/4 Cup Shredded Mozzarella

  • 1 Cup Marinara Sauce/Filetto di Pomodoro

  • Cooking Spray

  • Chopped Spring Onion - to garnish

[Steps]

  1. Preheat oven 230degC. Lightly coat a large baking tray with oil.

  2. Combine breadcrumbs and parmesan in a bowl.

  3. Lightly brush butter onto chicken, then coat with breadcrumbs, place on baking tray. Repeat for remaining chicken.

  4. Spray a little more oil on the chicken and bake for 20mins. Turn chicken over and bake another 5mins.

  5. Remove from oven when done and spoon 1tbsp sauce over each piece of chicken, top with 1 1/2tbsp mozzarella. Bake for 5mins until cheese melts.

  6. Serve garnished with spring onion.
