Lemon Chicken

[Ingredients]

  • 400g chicken - deboned from drumsticks

  • Soften using cleaver then cut into strips

[Marinade]

  • 3/4tsp sea salt

  • 3/4tsp raw sugar

  • 3/4tsp sesame oil

  • 1 small beaten egg

[Coating]

  • 6tbsp sifted self raising flour

  • OR 3tbsp rice flour + 3tbsp corn starch

[Sauce]

  • 6tbsp honey

  • 2tbsp sour plum sauce

  • 6tbsp lemon juice

  • 1tbsp Heinz white vinegar

[Steps]

  1. Rinse chicken with hot water and drain dry.

  2. Marinate chicken for 1hr, covered in the fridge.

  3. Pour beaten egg over chicken and roll chicken in coating.

  4. Heat up 1 1/2 cup oil in a wok and cook chicken until they are lightly brown. Drain on kitchen towels.

  5. Sauce. Mix all the ingredients together and pour into a saucepan.

  6. Heat sauce over medium fire. Once it starts to boil, remove from heat and pour over chicken.

  7. Garnish with lemon slices.
