[Ingredients]
1.5kg chicken wings
3tbsp dark soy sauce
1tbsp light soy sauce
3tbsp mirin/dry sherry
2tbsp sugar
2tbsp chili bean sauce
1tbsp finely chopped orange zest
1 1/2tbsp madras curry powder
1tsp chili oil
[Steps]
Pierce skin of wings with a fork. This will allow the marinade to penetrate.
Mix all the ingredients together in a small bowl. Marinade in the fridge for 1hr.
Preheat oven grill and grill wings for 10mins, turning from time to time to avoid burning.
