Pandan Chicken

[Ingredients]

  • 3 peeled shallots

  • 5 cloves peeled garlic

  • 3tbsp Worcestershire sauce

  • 2tbsp sweet plum sauce/honey

  • 1 1/2tbsp steak sauce

  • 1tbsp hoisin sauce

  • 1/2 to 1tsp five spice powder

  • 4tbsp oil

  • 1tsp sesame oil

  • 700g chicken thigh cut into serving pieces

  • 24 rinsed and dried pandan leaves

  • Oil for deep frying

[Steps]

  1. Grind shallots and garlic in a blender and mix together with other ingredients except for chicken and pandan leaves. Rub the mixture into chicken and set aside for 2hrs.

  2. Wrap each chicken in a pandan leaf, tying it in a simple knot such that the chicken is being enclosed.

  3. Deep fry chicken in very hot oil for 3 to 5mins and serve hot.
