Zucchini Bolognese


[Ingredients]

  • 300g tomato sauce

  • 150g minced meat

  • 3 tomatoes (about 300g), sliced

  • 1.5pc zucchini (about 300g)

  • 1tbsp extra virgin olive oil

  • Pinch of salt

  • Pinch of black pepper

  • 2/3pc onion (about 75g), chopped

  • 5g fresh parsley, chopped

  • Pinch of oregano (fresh/dried)


[Steps]

  1. Peel zucchini and grate it lengthways to form long strips.

  2. Heat up oil in a pan over medium heat. Add in zucchini and cook slightly. Transfer to a serving plate.

  3. Add in meat and saute over medium-high heat for 5mins. Add in tomatoes and onions. Continue to saute till vegetables are cooked, about 3mins.

  4. Add in tomato sauce, salt, pepper and oregano. Mix well and allow sauce to simmer for about 15mins.

  5. Adjust seasoning. Pour over prepared zucchini and sprinkle parsley over.
