White Fungus Chicken Soup



[Ingredients]

- 1 whole chicken leg, chopped into smaller pcs and par-boiled

- 3 slices of ginger

- 4-5 Chinese mushroom, soaked and halved

- 500ml bone and collagen stock / water

- 1 pack white fungus, soaked


[Steps]

1. Season chicken with some salt, pepper and sesame oil.

2. In a soup pot, add 1tsp cooking oil over medium-low heat. Add in ginger and mushroom, stir-fry till fragrant.

3. Add in chicken and stir-fry for a few mins.

4. Add in stock / water and bring to a simmer for 10mins.

5. Add in white fungus and simmer for another 30mins. Adjust seasoning.
