[Ingredients]
1pkt hong kong noodles (usually has 4 servings in it)
1pkt chye sim / kai lan / xiao bai cai - blanched, cut into lengths
200g char siew (ready-to-eat or make your own) - sliced
[Noodle Sauce]
1tbsp oyster sauce
1tbsp light soy sauce
1/2tbsp dark soy sauce
1tsp sesame oil
[Wantons]
250g minced meat
100g minced prawns
1tsp salt
1tsp sugar
1/2tsp black pepper
1 1/2tbsp light soy sauce
2tsp sesame oil
3/4 egg white
Some chopped scallions
1pkt wanton wrappers
[Steps]
Wanton: Place minced meat in a bowl. Pick it up and smack it back into the bowl a few times till it sticks to the bowl - flip the bowl to do a test check.
Add in prawns, salt, sugar, pepper, soy sauce and sesame oil and mix well.
Gradually add in egg white (you might need more or lesser egg white, depending on the egg size) and mix well, mixture should be combined and feels sticky. Lastly, mix in scallions.
Wrap wantons up. If you want to do them both ways, deep-fry half of it and boil the other half in chicken broth.
Microwave noodle sauce ingredients together for 20secs, mix well and set aside.
Bring a pot of water to boil. Boil noodles for 45secs, then rinse it under tap to remove excess starch.
Mix noodles with 2tbsp prepared sauce and serve with char siew, vegetable, fried wanton and wanton soup.
