Turmeric Curry Chicken


[Ingredients]

  • 600-800g chicken (drumsticks, chicken parts, chicken leg, etc)

  • 1 medium onion - peeled and chopped

  • 3 medium potatoes - peeled and cut into pieces

  • 1 carrot - peeled and cut into pieces

  • 1tsp fish sauce

  • 1tsp gula melaka / brown sugar

  • 150ml stock / water

  • 200ml coconut milk

[Spice Paste]

  • 1tsp turmeric powder

  • 1 lemongrass - outer layers removed

  • 2cm ginger - peeled

  • 6 garlic cloves - peeled

  • 6 shallots - peeled

  • 2 red chilli

  • 1 cilantro root

  • 1tsp belacan - toasted

  • 2tsp fish sauce

  • 1tsp gula melaka / brown sugar

  • 4tbsp shallot oil


[Steps]

  1. Blend spice paste ingredients together into a smooth paste.

  2. Use half the paste to marinate chicken and let sit for 30mins.

  3. In a stew pot over medium-low heat, add 1tbsp shallot oil and onion, saute till soften.

  4. Add carrots and potatoes, followed remaining spice paste. Saute till fragrant.

  5. Add in chicken and cook for 5mins. Then, add in fish sauce, gula melaka / brown sugar and stock / water. Mix well and cook covered for 20mins.

  6. Add in coconut milk and cook covered for 15mins, or till chicken is tender.
