Triple Egg Spinach


[Ingredients]

  • 1pkt spinach - break in into lengths, separate stems and leaves, discard roots

  • 1 century egg - peeled, diced

  • 1 salted egg - boiled, peeled, diced

  • 2 eggs - beaten

  • 2 garlic cloves - peeled, chopped

  • Handful of dried shrimps - soaked for 30mins

  • 400ml chicken stock

  • 1/2tsp salt

  • Pepper

  • 1tsp hua diao wine

  • Handful of goji berries

[Steps]

  1. Heat pan with some oil. Stir-fry garlic and dried shrimps till fragrant.

  2. Add in spinach stems and stir-fry till soft.

  3. Add in chicken stock and salt. Mix well and let simmer for 5mins.

  4. Add in century egg, salted egg, spinach leaves, pepper, hua diao wine and goji berries. Mix well.

  5. Lastly, mix in beaten eggs.
