Tomato Omelette with Prawns


[Ingredients]

  • 2 large and ripe tomatoes

  • 4 large eggs - beaten

  • 1tsp light soy sauce

  • 1/4tsp white pepper

  • 1tsp mirin

  • 6 large prawns - peeled and deveined

  • 1 medium onion - peeled and thinly sliced

  • 2 garlic cloves - peeled and chopped

  • 100ml stock

  • 2tbsp tomato ketchup

  • 1/2tsp sugar


[Steps]

  1. Cut a cross slit at the bottom of tomatoes and blanch for 1min. Remove and place in ice water. Then, peel off skin and cut into wedges.

  2. In a non-stick pan, add in 1tbsp cooking oil and onions, saute till soft.

  3. Add in soy sauce and mirin, cook for 1min. Followed by garlic and tomato, cook for 1min.

  4. Add in prawns, cook it slightly, then add in stock and ketchup. Mix well and let simmer for 2-3mins till it is slightly thickened.

  5. Add in eggs and let it slowly set over low heat. Just before the egg is cooked, turn off fire and give it a stir.
