Tomato Curry Pork Ribs


[Ingredients]

  • 500g pork ribs

  • 1 large yellow - peeled, sliced

  • 1 carrot - peeled, cut into chunks

  • 200g pumpkin - peeled, cut into chunks

  • 1 can whole tomatoes

  • 200ml coconut milk

  • 100ml stock

  • 4 hardboiled eggs

  • 1/2tsp salt

  • 1/4tsp chicken powder


[Spice Paste]

  • 2 lemongrass - remove outer layers

  • 5 garlic cloves - peeled

  • 1 red chilli

  • 5 dried chilli - soaked

  • 1 coriander root

  • 1/2tsp turmeric powder

  • 1tbsp fish sauce

  • 15g gula melaka

  • 1/2tsp salt


[Steps]

  1. Blend spice paste ingredients together till smooth, rub onto ribs.

  2. In a stew pot of a pressure cooker, saute onions till soft, add in ribs and cook for a few mins.

  3. Add coconut milk and stock, and pressure cook at mode 70 for 20mins.

  4. Remove ribs from pot. Add in tomatoes, pumpkin, carrot and eggs. Let simmer till the liquid thickens, about 15mins.

  5. Add in ribs and mix well.
