[Ingredients]
6 hardboiled eggs
1 can unseasoned tomato puree
1 small yellow onion - peeled and chopped
3 garlic cloves - peeled and chopped
1 red chilli - sliced
2 small red or green chilli - sliced
3 shallots - peeled
1 inch-sized ginger - peeled and sliced
1 tsp chilli powder
2-3 kaffir lime leaves
1.5 tbsp gula melaka
0.5 tsp salt
1 tbsp fish sauce
[Steps]
Stir-fry onion, garlic, ginger and shallot with 1tbsp of oil till fragrant. Add in both the chilli and stir-fry for another min.
Add in tomato and let simmer for 7-8mins.
Meanwhile, pan-fry eggs till golden brown.
Blend tomato mixture till smooth, then add in eggs and the remaining ingredients. Let simmer for 15mins till the sauce thickens.
