Tomato Curry Eggs


[Ingredients]

  • 6 hardboiled eggs

  • 1 can unseasoned tomato puree

  • 1 small yellow onion - peeled and chopped

  • 3 garlic cloves - peeled and chopped

  • 1 red chilli - sliced

  • 2 small red or green chilli - sliced

  • 3 shallots - peeled

  • 1 inch-sized ginger - peeled and sliced

  • 1 tsp chilli powder

  • 2-3 kaffir lime leaves

  • 1.5 tbsp gula melaka

  • 0.5 tsp salt

  • 1 tbsp fish sauce


[Steps]

  1. Stir-fry onion, garlic, ginger and shallot with 1tbsp of oil till fragrant. Add in both the chilli and stir-fry for another min.

  2. Add in tomato and let simmer for 7-8mins.

  3. Meanwhile, pan-fry eggs till golden brown.

  4. Blend tomato mixture till smooth, then add in eggs and the remaining ingredients. Let simmer for 15mins till the sauce thickens.
