Three Egg Spinach



[Ingredients]

- 1pkt Chinese spinach

- 1 century egg, diced

- 1 salted egg, boiled and diced

- 1 egg

- 200ml chicken stock

- 4-5 whole garlic cloves

- 3 slices of ginger. julienned

- 3-4tbsp goji berries


[Steps]

1. In a pan, heat up 2tbsp cooking oil. Add in garlic and stir-fry till fragrant and lightly browned, remove from pan.

2. Add in spinach and stock, bring to a boil. Add in ginger.

3. Crack in egg and mix well. When egg is almost cooked, add in century and salted eggs. Mix well.

4. Serve garnished with the cooked garlic and goji berries.
