[Ingredients]
3 boneless chicken thigh (about 500g) - cut into pcs
20g ginger pcs - peeled and smashed
5 cloves garlic - peeled and smashed
2 tsp cornstarch
2 tsp cooking oil
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp fish sauce
1 tbsp sugar
1btl Kinohimitsu essence of chicken
1/4 cup shaoxing wine (绍兴酒)
10g basil leaves
[Steps]
Mix chicken with cornstarch and oil, set aside.
In a pan, pan-fry chicken till light brown and fragrant, push them to one side.
Add in ginger and garlic and pan-fry them till fragrant. Mix together with the chicken.
Add in light and dark soy sauce, fish sauce and sugar, mix well.
Pour in essence of chicken, mix well and let simmer covered for about 10mins.
Lastly, add in wine and basil leaves, mix well and serve.
