Three Cup Chicken



[Ingredients]

- 2tsp sesame oil

- 250g boneless chicken thigh, cut into bite size

- 3-4 slices of old ginger

- 5 cloves of garlic, peeled and smashed

- 1 bunch of fresh sweet Thai basil leaves


[Marinade]

- 1/2tsp pepper

- 1/2tsp sesame oil

- 1tsp dark soy sauce


[Seasoning]

- 2tbsp shaoxing wine

- 2tbsp sweet dark soy sauce

- 1tbsp light soy sauce

- 1/2tsp sugar


[Steps]

1. Mix chicken and marinade ingredients together. Set aside.

2. In a claypot, add 2tsp sesame oil over medium-low heat. Add in ginger and garlic, stir-fry till fragrant.

3. Add in chicken and stir-fry for a few mins.

4. Add in seasoning ingredients and let simmer for 3-4mins. Then, add in basil and cook covered for 4-5mins over low heat.

5. Turn off fire when chicken is cooked through and sauce has thickened.
