Thai-style Steamed Grouper



[Ingredients]

  • 1 grouper fish - cleaned, rub with salt and pepper

  • 1 lemongrass - outer layers removed, smashed and sliced lengthways

  • 2 kaffir lime leaves

  • Scallion / coriander - garnish


[Spice Paste]

  • 1 red chilli - deseeded

  • 2 small green chilli

  • 1 inch-sized old ginger - peeled

  • 2 garlic cloves - peeled

  • 2 coriander root

  • 1/3 tsp salt

  • 2-3 tbsp lime juice

  • 1.5 tbsp fish sauce

  • 1 tbsp sugar

  • 2 tbsp water / stock


[Steps]

  1. On a steaming tray, lay lemongrass and lime leaves. Place fish over and steam it on high heat for 10mins - varying slightly depending on size of fish.

  2. Roughly blend up spice paste ingredients together - not into a smooth paste.

  3. Pour it over the fish and steam it for another 2mins.

  4. Sprinkle garnish over and serve.
