[Ingredients]
1 grouper fish - cleaned, rub with salt and pepper
1 lemongrass - outer layers removed, smashed and sliced lengthways
2 kaffir lime leaves
Scallion / coriander - garnish
[Spice Paste]
1 red chilli - deseeded
2 small green chilli
1 inch-sized old ginger - peeled
2 garlic cloves - peeled
2 coriander root
1/3 tsp salt
2-3 tbsp lime juice
1.5 tbsp fish sauce
1 tbsp sugar
2 tbsp water / stock
[Steps]
On a steaming tray, lay lemongrass and lime leaves. Place fish over and steam it on high heat for 10mins - varying slightly depending on size of fish.
Roughly blend up spice paste ingredients together - not into a smooth paste.
Pour it over the fish and steam it for another 2mins.
Sprinkle garnish over and serve.
