Thai-style Dried Wings


[Ingredients] - 12-15 mid-wing and / or drumlets


[Spice Mix] - 2 small green chilli

- 3 shallot, peeled and sliced

- 3 cloves of garlic, peeled and chopped

- 3 kaffir lime leaves, julienned

- 1-2 lemongrass, center parts, finely sliced


[Marinade] - 1tsp pepper

- 1tsp salt

- 1tsp garlic powder

- 1/4tsp chilli powder

- 1/4tsp coriander powder


[Seasoning] - 1tsp sugar

- 1tsp fish sauce


[Steps] 1. In a mixing bowl, mix chicken and marinade ingredients together. Then add in spice mix ingredients and mix well. Let marinate for 30mins.

2. Deep-fry chicken, then drain on paper towels.

3. Leave just 1tbsp of oil in the pan and stir-fry spice mix on low heat till fragrant.

4. Toss in the chicken and stir-fry for 5mins. Add in seasoning ingredients and mix well.
