Thai Coconut Soup 泰式椰奶汤



[Ingredients]

- 400g DoDo Yong Tau Foo mix

- 800ml chicken stock

- 800ml coconut milk

- 3 stalks lemongrass, bruised and sliced

- 3 slices galangal, sliced

- 5 chilli padi

- 1 medium yellow onion, sliced

- 150g oyster mushroom

- 1 tomato, sliced

- 2tbsp fish sauce

- 1tsp palm / brown sugar

- 8 kaffir lime leaves

- Juice from 3 limes

- Corainder


[Steps]

1. In a pot, add in chicken stock, coconut milk, lemongrass and galangal. Cook over low heat.

2. Add in chilli padi, onion and mushroom, mix well.

3. Add in yong tau foo pieces and mix well.

4. Add in dish sauce, sugar and lime leaves. Mix well.

5. When everything is cooked, turn off heat. Add in lime juice and coriander. Stir well.
