[Ingredients]
10 dried chillies - soaked and cut into pcs
2 boneless chicken thigh - cut into pcs
1 large yellow onion - peeled and sliced
3 garlic cloves - peeled and chopped
1 punnet fresh basil - trimmed and rinsed
0.5 tsp pepper
1 tbsp fish sauce
[Seasoning]
1 tbsp fish sauce
1 tbsp oyster sauce
1.5 tbsp sweet dark soy sauce
2 tsp cornstarch + 2 tbsp water
[Steps]
Mix chicken with pepper and fish sauce, let marinate for 30mins.
Stir-fry onion, garlic and chilli with 1tbsp of oil over medium-low heat.
Add in chicken and stir-fry for a few mins.
Followed by seasoning ingredients (except cornstarch), mix well. Add a few tbsp of water if it’s too dry.
Then, add in cornstarch solution. Let simmer covered for 4-5mins till chicken is cooked through.
Lastly, add in basil, stir well for 30secs and remove from heat.
