Thai Basil Chicken


[Ingredients]

  • 10 dried chillies - soaked and cut into pcs

  • 2 boneless chicken thigh - cut into pcs

  • 1 large yellow onion - peeled and sliced

  • 3 garlic cloves - peeled and chopped

  • 1 punnet fresh basil - trimmed and rinsed

  • 0.5 tsp pepper

  • 1 tbsp fish sauce


[Seasoning]

  • 1 tbsp fish sauce

  • 1 tbsp oyster sauce

  • 1.5 tbsp sweet dark soy sauce

  • 2 tsp cornstarch + 2 tbsp water


[Steps]

  1. Mix chicken with pepper and fish sauce, let marinate for 30mins.

  2. Stir-fry onion, garlic and chilli with 1tbsp of oil over medium-low heat.

  3. Add in chicken and stir-fry for a few mins.

  4. Followed by seasoning ingredients (except cornstarch), mix well. Add a few tbsp of water if it’s too dry.

  5. Then, add in cornstarch solution. Let simmer covered for 4-5mins till chicken is cooked through.

  6. Lastly, add in basil, stir well for 30secs and remove from heat.
