[Ingredients]
14-16 chicken wings - rinsed and pat dry
Salt and pepper
3tbsp rice flour
1 medium yellow onion - peeled and chopped
3 garlic cloves - peeled and chopped
3 ginger slices
1 carrot - peeled and cut into pieces
2 potato - peeled and cut into pieces
1 tomato - cut into wedges
[Seasoning]
2-3tbsp tomato ketchup
200ml stock
1/2tsp chicken powder
1tbsp sugar
1tbsp apple cider vinegar or any kind of vinegar
[Steps]
Marinate chicken with salt and pepper.
Coat with rice flour and pan fry till golden on the outside. Then, pan fry potatoes.
In a separate pan, add in 1tbsp cooking oil over medium heat. Add in onion, garlic and ginger, and cook till fragrant.
Add in fried chicken and potatoes, followed by remaining ingredients. Mix well and bring to a simmer. Allow to simmer till liquid thickens into gravy-like consistency. Adjust seasoning.
