Sweet and Sour Ribs


[Ingredients A]

  • 500-600g ribs - rinsed

  • 1tbsp chopped ginger

  • 1tbsp chopped garlic

  • 1tsp salt

  • 1tsp pepper

  • 1 1/2tbsp brown sugar


[Ingredients B]

  • 2 coriander root - chopped

  • 6 garlic cloves - peeled, chopped

  • 2 red chilli - sliced

  • 2tbsp kumquat compote / marmalade

  • 200ml water

  • 400ml stock

  • 1 1/2tbsp apple cider vinegar

  • 5tbsp tomato ketchup


[Steps]

  1. Mix ingredients A together and set aside.

  2. Saute garlic and coriander root with 1tbsp oil till fragrant.

  3. Add in marinated ribs and saute for a few mins.

  4. Add in kumquat, chilli, vinegar and ketchup. Mix well.

  5. Add in water and stock, mix well. Let simmer covered for 1hr or pressure cook at highest mode for 35-40mins, till ribs are falling off the bone tender.
