[Ingredients] - 400g fish fillet, slice into pieces
- 1 red capsicum, deseeded and slice into pieces
- 1 yellow onion, slice into pieces
- 1 Japanese cucumber, slice into pieces
- 3 cloves of garlic, chopped
- 100g cornstarch + some salt and pepper
- 4tbsp cooking oil
[Marinade]
- 1tsp light soy sauce
- 1tsp sesame oil
- 1/4tsp pepper
[Seasoning] - 4-5tbsp tomato ketchup
- 1tsp rice vinegar
- 2tbsp sugar
- 1/2tsp salt
- 50ml water
- 1tbsp cornstarch
[Steps] 1. Mix fish with marinade ingredients and let sit for 30mins.
2. Coat fish with seasoned cornstarch.
3. Pan-fry fish over medium heat till golden brown on both sides. When cooked, drain on paper towels.
4. Mix seasoning ingredients together.
5. Heat up pan with 1tbsp cooking oil. Add in onion and garlic, stir-fry till fragrant, followed by seasoning. Cook till the sauce thickens.
6. Allow to cook for 1min, then add in cucumber and capsicum, cook over low heat for about 1min.
7. Turn off fire and add in fish, mix well.
