[Ingredients]
400-450g pork tenderloin - trimmed, sliced thinly against the grain
1 cilantro root - chopped
1 large yellow onion - peeled, sliced
3 garlic cloves - peeled, chopped
1tbsp julienned ginger
1 stalk scallion - sliced, separate white and green parts
100ml water / stock
[Marinade]
1tsp oyster sauce
1/2tsp pepper
1tbsp sesame oil
1tbsp cornstarch
1/4tsp baking soda
1tbsp dark soy sauce
2tbsp water
2tbsp shallot oil
[Seasoning]
1tsp sugar
1tsp oyster sauce
1tbsp dark soy sauce
Cornstarch solution - 1tbsp cornstarch + 2tbsp water
[Steps]
Combine pork with marinade ingredients. Let marinate 20-30mins.
Saute garlic, cilantro and white parts of scallion with shallot oil over medium heat till fragrant.
Add in pork and ginger and stir-fry quickly.
Followed by onion and seasoning ingredients, mix well.
Add in water / stock if it’s too dry, followed by cornstarch solution and cook till liquid thickens.
Remove from heat and sprinkle green parts of scallion over.
