Stir-fry Ginger Scallion Beef



Serving: 3-4pax


[Ingredients]

  • 350g beef slices

  • 2 stalks scallions - cut into lengths

  • 2 tbsp cooking oil

  • 100g ginger slices

  • 2 tbsp water

  • 1 tbsp dark soy sauce

  • 1 tsp light soy sauce

  • 1 tbsp oyster sauce

  • 0.5 tsp sugar

  • 1 tbsp shaoxing wine

  • 1 tsp sesame oil


[Marinade]

  • 0.5 tbsp oyster sauce

  • 1 tbsp light soy sauce

  • 1.5 tbsp shaoxing wine

  • 1 tsp sugar

  • 0.25 tsp baking soda

  • 1 tbsp cornstarch

  • 2 tsp sesame oil


[Steps]

  1. In a mixing bowl, combine all the marinade ingredients with beef. Mix well and let marinate chilled for at least 30mins.

  2. In a heated pan with oil, deep-fry beef slices till half-cooked. Drain and set aside.

  3. In a heated pan with 2tbsp of oil, stir-fry ginger till fragrant. Add in water, light and dark soy sauce, oyster sauce and sugar. Mix well.

  4. Add in beef, scallions, wine and sesame oil. Mix well and serve with rice.
