[Ingredients]
- 2 large ripe tomatoes
- 4 large eggs
- 1tsp light soy sauce
- 1/4tsp pepper
- 1tsp mirin
- 1 medium onion, peeled and thinly sliced
- 2 cloves of garlic, peeled and chopped
- 100ml stock
- 2tbsp tomato ketchup
- 1/2tsp sugar
- Some prawns, peeled (optional) > right photo
[Steps]
1. Make a slit at the bottom of the tomatoes. Simmer them in boiling water for 1min, then into an ice bath. Remove tomato skin and cut them into wedges.
2. In a non-stick frying pan, add in onion and 1tbsp cooking oil. Stir-fry till onions are soft.
3. Add in soy sauce and mirin, cook for 1min. Followed by garlic and tomatoes, stir-fry for 1min.
4. Add in stock and ketchup, let simmer for 2-3mins till mixture thickens slightly.
5. Beat eggs and add it in. Allow to slowly set over low heat.
6. Just before the eggs start to set, turn off fire and stir to combine.
