Steamed Red Grouper



Serving: 6-8pax


[Ingredients]

  • 900g red grouper - butterfly the fish

  • 1 tsp salt

  • 1 tbsp white peppercorn - crushed

  • 30g ginger slices

  • 70g scallions - cut into lengths

  • 4 tbsp shaoxing wine


[Sauce Mixture]

  • 2 tbsp XO sauce

  • 2 tbsp soy sauce for seafood

  • 1.5 tsp sugar

  • 2 tbsp shaoxing wine

  • 2 tbsp chopped scallions

  • 2 tbsp minced garlic

  • Some very thinly sliced ginger

  • 3 tbsp cooking oil

  • Thinly sliced scallions - soaked in iced water

  • Thinly sliced red chilli - soaked in iced water


[Steps]

  1. Clean and pat dry fish, set aside.

  2. Prepare steamer with water and get it boiling.

  3. On a steaming plate, add on peppercorn, ginger and scallions. Place a pair of chopsticks over to act as a steaming barrier.

  4. Place fish over and steam it for 13-15mins.

  5. In a saucepan, add in soy sauce, sugar and wine. Bring to boil and set it aside.

  6. Heat up some oil and fry garlic till fragrant. Drain, reserve both garlic and oil.

  7. When fish is cooked, heat up garlic oil and add in chopped scallions, pour it over the fish.

  8. Mix XO sauce with sauce mixture, pour it over the fish.

  9. Lastly, sprinkle fried garlic, sliced scallions and chilli over.
