[Ingredients]
- 10-12 large prawns
- 5 cloves of garlic, peeled and chopped
- 1 1/2tbsp chopped ginger
- 1 lemongrass, center part only, chopped
- 2 red chilli, seeded and chopped
- 1 stalk of scallion, chopped
- 8-10 napa cabbage leaves
- 1tbsp shaoxing wine
- Salt and pepper
- 1tbsp light soy sauce
- 1tbsp balsamic vinegar
- 1/2tsp sugar
[Steps]
1. Trim away thorns and legs of prawns. Snip open the back of the prawn till halfway through, using a pair of kitchen scissors, devein.
2. Drizzle shaoxing wine over, and sprinkle some salt and pepper. Mix well.
3. Line cabbage leaves on steaming dish, followed by prawns. Steam at high heat till just cooked, about 6-8mins.
4. Remove prawns from steamer and reserve the liquid.
5. In a pan, add in 2tbsp shallot oil over medium-low heat. Add garlic, ginger, lemongrass and chilli, stir-fry till fragrant. Followed by reserved prawn liquid, and some water if needed. Mix well.
6. Add in soy sauce, vinegar and sugar. Mix well and allow to cook for a few mins.
7. Lastly, stir in scallion and scoop over prawns.
