[Ingredients] - 4 60g eggs
- 600ml chicken stock
- 6 scallops, cubed
- 12-15 clams
- 1tsp light soy sauce
- 1tsp fish sauce
[Topping] - 1tsp sesame oil
- 1tsp shaoxing wine
- 1tsp light soy sauce
- Scallions
- Fried shallot
[Steps] 1. Beat eggs, stock, soy sauce and fish sauce together. Strain mixture through a sieve into a steaming dish.
2. Place scallops into the egg. Cover dish with foil and poke some holes on the foil. Steam at low heat for 15mins till 3/4 cooked.
3. Add in clams and steam for another 5mins till egg is fully cooked.
4. Mix topping seasonings together and drizzle over egg. Garnish with scallions and fried shallot.
