[Ingredients]
2 cod fillet - rinsed, pat dry
4 ginger slices
2 stalks scallion - cut into lengths, separate white and green parts
5 garlic cloves - peeled, chopped
2 coriander root - rinsed, chopped
1 red chilli - deseeded, julienned (optional)
2tbsp shallot oil
1tbsp light soy sauce
1/2tsp sugar
[Steps]
Steam cod with ginger and white parts of scallion for 10mins.
Saute garlic with shallot oil over low heat till fragrant and it turned slightly golden.
Add in coriander root and saute till fragrant, about 1min.
Followed by light soy sauce, sugar and chilli, mix well. Pour it over the fish and sprinkle green parts of scallion over.
