Spicy Seafood Stew

[Ingredients]

  • 400g salmon fillet - cut into pcs

  • 2 medium squid - cleaned, trimmed and cut into rings

  • 4 large prawns - peeled and deveined

  • 8 scallops

  • 200g shallots - peeled

  • 1 bulb garlic - peeled and chopped

  • 1 red chilli - deseeded and chopped

  • 1 medium carrot - peeled and diced

  • 2 coriander root - chopped

  • 2 bay leaves

  • 1 medium yellow onion - peeled and chopped

  • 1 can whole tomatoes

  • 1 can tomato puree

  • 1 large tomato - chopped

  • 250ml prawn / chicken stock

  • Salt and pepper


[Steps]

  1. Season seafood with salt and pepper.

  2. Pan-fry salmon, prawns and scallops till just cooked and are browned on the surface. Set aside.

  3. Stir-fry garlic, chilli, carrot, coriander root, bay leaves and onion till soft and fragrant.

  4. And in canned tomatoes and tomato puree. Followed by stock and let simmer for 10mins.

  5. Remove bay leaves and blend mixture till smooth. Adjust seasoning with salt, pepper and sugar.

  6. Add in squid and cook it for a min, followed by the rest of the seafood. Mix well.
