[Ingredients]
8 chicken drumsticks
4 chicken wings
80g rice flour
80g plain flour
1/4tsp turmeric powder
1/2tsp salt
1/2tsp black pepper
[Marinade]
3 cilantro roots
6 cloves garlic, peeled
1cm ginger, peeled
1 red chilli
2 chilli padi
1tbsp fish sauce
1/2tsp salt
1/2tsp turmeric powder
1tsp white pepper
1tsp sugar
[Steps]
Blend marinade ingredients into a smooth paste. Add to chicken, mix well and let marinate for 1hr.
Mix remaining ingredients together and coat chicken with it, dust off excess flour.
Preheat pan with 2cm level oil over low heat. Fry chicken till browned all over. Allow it to fry slowly. High heat will burn the chicken and oil will splatter!
Drain chicken on paper towels.
