Soy Milk Min Jiang Kueh



[Ingredients]

  • 150g plain flour

  • 60g sugar

  • 1/2tsp dry yeast

  • 1/2tsp baking soda

  • Pinch of salt

  • 200ml NutriSoy soy milk

  • 50ml coconut cream

  • 1 egg - beaten


[Filling]

  • 1/4 cup black sesame paste

  • 1/4 cup kaya

  • 1/4 cup ground peanut + sugar (to your preference)


[Steps]

  1. In a large mixing bowl, add in dry ingredients and mix well.

  2. Add soy milk and coconut cream to a saucepan and heat over low heat. Heat to just boiled, stirring. Gradually mix into the dry mixture.

  3. Add egg to batter and mix well.

  4. Cover the batter with a damp cloth and set aside for 1hr.

  5. Heat and grease a nonstick frying pan over low heat. Add 3 ladles of batter and allow to cook for 30secs.

  6. Sprinkle peanut and sugar over. Cover and cook for another 2mins.

  7. Fold pancake into half and remove from pan to a chopping board. Slice into serving pieces.

  8. For kaya and black sesame filling, cook the pancake first, then add the filling.
