[Ingredients]
150g plain flour
60g sugar
1/2tsp dry yeast
1/2tsp baking soda
Pinch of salt
200ml NutriSoy soy milk
50ml coconut cream
1 egg - beaten
[Filling]
1/4 cup black sesame paste
1/4 cup kaya
1/4 cup ground peanut + sugar (to your preference)
[Steps]
In a large mixing bowl, add in dry ingredients and mix well.
Add soy milk and coconut cream to a saucepan and heat over low heat. Heat to just boiled, stirring. Gradually mix into the dry mixture.
Add egg to batter and mix well.
Cover the batter with a damp cloth and set aside for 1hr.
Heat and grease a nonstick frying pan over low heat. Add 3 ladles of batter and allow to cook for 30secs.
Sprinkle peanut and sugar over. Cover and cook for another 2mins.
Fold pancake into half and remove from pan to a chopping board. Slice into serving pieces.
For kaya and black sesame filling, cook the pancake first, then add the filling.
