[Ingredients]
1 whole chicken leg
1 cinnamon stick
1 star anise
3 ginger slices
3 shallots - peeled, sliced
3 garlic cloves - peeled, smashed
3 shiitake mushrooms - soaked, sliced
200ml water
3 danggui slices
4-5 dried longans
1tsp sugar
1/2tsp salt
[Marinade]
1tsp light soy sauce
1/2tsp dark soy sauce
1tsp sesame oil
1tsp pepper
[Steps]
Marinate chicken with marinade ingredients. Let sit for 5mins.
In a cooking pot, add 1tsp oil over medium-low heat.
Add in cinnamon, star anise, ginger, shallot and garlic. Saute till fragrant.
Add in chicken and pan-sear it till it gets some colour.
Add in water, mushrooms, danggui and dried longans. Bring to a simmer and cook covered for 30mins, making sure the liquid doesn’t dry up.
Adjust seasoning and remove from heat.
