Singapore BBQ Wings



[Ingredients]

  • 12 chicken wings - cleaned and pat dry

  • 12 wooden skewers - soaked overnight

  • 5 calamansi


[Chicken Marinade]

  • 2 shallots - peeled and minced

  • 4 cloves garlic - peeled and minced

  • 2tbsp ginger juice

  • 2tbsp oyster sauce

  • 2tsp fish sauce

  • 2tbsp honey

  • 1tbsp light soy sauce

  • 1/2tsp salt

  • 1/2tsp pepper

  • 1tbsp sesame oil


[Chilli Sauce]

  • 6 red chillies

  • 5 chilli padi

  • 20g ginger - peeled and sliced

  • 5 cloves garlic - peeled

  • 50ml rice vinegar

  • Juice from 6 calamansi

  • 3tbsp sugar

  • 1 1/2tsp salt

  • 50ml chicken stock


[Steps]

  1. Place wings and marinade ingredients in a large mixing bowl. Mix well and let marinate covered and chill overnight.

  2. Place chilli sauce ingredients in a blender and blend till smooth.

  3. Skewer wings and place them on a wire rack placed on a baking tray, skin side down, brush with marinade. Bake in a preheated oven of 200degC for 8mins.

  4. Flip over and brush with marinade. Bake for another 8mins.

  5. Cover wings with foil and bake for another 10mins.

  6. Serve wings with prepared chilli sauce and calamansi.
