Sea Salt Miso Chocolate Chip Cookies

[Ingredients]

  • 240g all-purpose flour

  • 1 tsp baking powder

  • 3/4 tsp baking soda

  • 150g unsalted butter

  • 12g milk powder

  • 15g white miso

  • 160g brown sugar

  • 60g white sugar

  • 1 large egg

  • 2 tsp vanilla essence

  • 200g dark chocolate - roughly chopped

  • Sea salt flakes


[Steps]

  1. Preheat oven 175degC.

  2. Melt butter in a pot over low heat. Add in milk powder and whisk well. Once it turns dark golden brown, remove it from heat.

  3. Add in miso and mix well - it will bubble slightly. Set aside.

  4. In a mixing bowl, sift flour, baking powder and soda, mix well.

  5. Add in both the sugar, mix well.

  6. Gradually mix in the butter mixture and continue mixing till well combined.

  7. Followed by egg and vanilla - batter should look smooth and glossy.

  8. Fold in flour mixture till 80% combined. Add in chocolate chunks and mix well.

  9. On a parchment paper lined baking tray, place on 1tbsp dough with 1-inch spacing.

  10. Sprinkle salt flakes over and let chill for 30mins.

  11. Bake it for 10-12mins. Halfway through, bring the tray out and give it a few taps. Rotate the tray and put it back into the oven.

  12. When done, allow it to cook on the tray for a few mins, then transfer to wire rack to cool down completely.
