Satay Chicken Wings


[Ingredients]

  • 8-10 chicken wings - rinsed, pat dry

  • 1tbsp chopped ginger

  • 1tbsp chopped garlic

  • 2 coriander root - chopped

  • 2tbsp curry powder

  • 1tbsp fish sauce

  • 125ml coconut milk

  • 1/2tsp pepper


[Spicy Peanut Sauce]

  • 2tbsp creamy peanut butter

  • 1tsp chilli flakes

  • 1tsp chilli powder

  • 15g gula melaka - chopped

  • 1 1/2tbsp sweet dark vinegar

  • 1tbsp red curry paste

  • Ground peanut

[Steps]

  1. Combine chicken and the ingredients together. Let marinate covered for at least 4hrs.

  2. Pan sear chicken over low heat till browned on both sides.

  3. Sauce: In a saucepan, add in all the ingredients except for the peanuts. Cook over low heat for 5-6mins, till sugar has melted.

  4. Transfer it to a sauce dish and sprinkle peanuts over.
