[Ingredients]
8-10 chicken wings - rinsed, pat dry
1tbsp chopped ginger
1tbsp chopped garlic
2 coriander root - chopped
2tbsp curry powder
1tbsp fish sauce
125ml coconut milk
1/2tsp pepper
[Spicy Peanut Sauce]
2tbsp creamy peanut butter
1tsp chilli flakes
1tsp chilli powder
15g gula melaka - chopped
1 1/2tbsp sweet dark vinegar
1tbsp red curry paste
Ground peanut
[Steps]
Combine chicken and the ingredients together. Let marinate covered for at least 4hrs.
Pan sear chicken over low heat till browned on both sides.
Sauce: In a saucepan, add in all the ingredients except for the peanuts. Cook over low heat for 5-6mins, till sugar has melted.
Transfer it to a sauce dish and sprinkle peanuts over.
