Sambal Telur (Eggs in Sambal)



[Ingredients]

  • 8 large hardboiled eggs

  • 1 large yellow onion - peeled and chopped

  • 8 shallots - peeled and sliced

  • 1 large tomato - chopped

  • 1 lemongrass - outer layers removed, smashed

  • 4 garlic cloves - peeled and chopped

  • 1 red chilli - deseeded and chopped

  • 1 can low-sodium tomato puree

  • 2 tbsp tamarind paste

  • 1.5 tbsp gula melaka

  • 0.5 tsp sea salt


[Steps]

  1. Stir-fry onion, lemongrass, garlic and shallots over low heat till fragrant and soft.

  2. Add in tomatoes and chilli, and cook for 2mins.

  3. Then, add in tomato puree and tamarind. Bring to a boil, then let simmer covered till tomatoes are soft.

  4. Remove lemongrass and blend mixture till smooth.

  5. Add in gula melaka, salt and eggs. Mix well and let simmer for 5-6mins. Adjust seasoning if required.
