[Ingredients]
500g medium prawns
1.5 tbsp rice flour
1 tbsp chopped garlic
1 tbsp chopped ginger
25g chopped red capsicum
1 tbsp chopped scallions (white parts)
1 tbsp chopped shallots
1 tsp salt
1/2 tsp white pepper
1/2 tsp black pepper
1 tsp sugar
Chopped scallions (green parts) - garnish
[Steps]
Trim prawns, rinse and pat dry. Dust them with rice flour.
Deep-fry prawns till 50% cooked and drain. Then, bring the heat up and fry prawns for a second time. Drain and set aside. Reserve cooking oil.
In the same pan with some reserved oil over low heat, stir-fry garlic, ginger, capsicum, scallions and shallots till fragrant.
Add in prawns and mix well. Followed by salt, pepper and sugar.
Serve garnished with chopped scallions.
