[Ingredients] - 1/2 cup rice grains
- 200ml chicken stock
- 400-500ml water
- 1/2tbsp minced garlic
- 1tbsp shallot oil
- Pinch of pepper
- 150g salmon, lightly season with salt
- 3-4 bunches of spinach, cut into sections
- 2tbsp corn kernels
- 80g pumpkin, peeled and cubed
[Optional] - Shredded ginger
- Chopped scallion
- Fried shallotS
- Fried doughstick
[Steps] 1. Add rice, pumpkin, water, stock and shallot oil in a pot. Cook till rice and pumpkin have softened. Mash pumpkin slightly.
2. Add ginger and pepper, mix well.
3. Adjust with more water and cook till desire porridge texture.
4. Add in corn and adjust seasoning if needed.
5. Add in spinach and salmon. Remove from heat when both are cooked.
6. Serve garnished with ginger, scallion, fried shallots and doughstick.
