Prosperous Fish Maw Soup


[Ingredients]

  • 1-2pc dried fish maw - soaked, cut into pieces and parboiled

  • 2 small dried sole fish - rinsed and pat dry

  • 250g firm white fish - sliced

  • 8 napa cabbage leaf - cut into pieces (separate firm and soft parts)

  • 1 carrot - peeled and sliced

  • 8 large scallops

  • 1/2pkt shimeiji mushrooms - roots removed

  • 6 + 4 garlic cloves - peeled and chopped

  • 4 ginger slices

  • 2 cilantro roots

  • Fresh cilantro leaves - garnish

  • 500ml stock (🔍bone and collagen stock)

  • 1 fermented beancurd

  • 1tsp sea salt


[Steps]

  1. Fry chopped garlic (6 cloves worth) at low heat till golden, reserve oil.

  2. Air-fry sole fish at 180degC for 15mins till crisp. Blend / chop into small pieces.

  3. In a soup pot over medium heat, add in 2tbsp garlic oil, chopped garlic (4 cloves worth), cilantro root and ginger, saute till fragrant.

  4. Add in dried sole fish and saute for a few mins. Followed by carrots and firm parts of cabbage. Let cook 1min.

  5. Add in stock and bring to a simmer. Followed by fish maw and mushrooms, let simmer 10mins.

  6. Add in fermented beancurd and salt, followed by fish slices and scallops. Turn off heat once fish and scallops are cooked.

  7. Add in remaining cabbage and keep the pot covered till about to serve.

  8. Right before serving, drizzle some garlic oil and sprinkle fried garlic and cilantro leaves over.
