[Ingredients] - 10-12 dumpling skin
- 10-12 large prawns, peeled, leaving tail intact, sliced in the middle but not all the way thru
- 150g minced meat / chicken
- 1 stalk of scallion, chopped
- 1/2tsp chopped ginger
- Handful of goji berries
[Seasoning] - 1tsp light soy sauce
- 1tbsp fried shallot
- 1tbsp shallot oil / sesame oil
- 1/2tsp pepper
[Steps] 1. Combine minced meat with ginger, scallion and seasoning ingredients.
2. Get a piece of dumpling skin. Lay a piece of prawn in the center. Add 1tsp of meat mixture and 1pc of goji berry. Wrap it up and use water as adhesive to seal the edges together. Repeat for all the dumplings.
3. In a non-stick frying pan, add in 1 1/2tbsp cooking oil over medium-low heat. Arrange dumplings into the pan and cook covered for about 8-10mins. The bottom should be browned and crisp.
