Pork Ribs with Pineapple


[Ingredients A]

  • 1 rack pork ribs - about 500g

  • 1tsp baking soda

  • 1tsp salt

  • 1tsp black pepper


[Ingredients B]

  • 1/2 fresh pineapple - peeled, cut into chunks

  • 1 carrot / daikon - peeled, cut into chunks

  • 1 medium yellow onion - peeled, sliced


[Ingredients C]

  • 2 coriander root

  • 6 garlic cloves - peeled

  • 4 ginger slices

  • 1 red chilli - sliced

  • 2 1/2tbsp tomato ketchup

  • 1tbsp palm sugar

  • 1tsp five spice powder

  • 1tsp chilli powder

  • 1tbsp gochujang

  • 1tbsp fish sauce

  • 1tbsp Chinese wine

  • Zest of 1 lime

  • Juice of 1/2 lime

  • Some pepper


[Steps]

  1. Rub ribs with baking soda and set aside for 15mins. Then, rinse off and cut into individual ribs.

  2. Season ribs with salt and pepper.

  3. Blend C together till smooth. Pour onto ribs, mix well and let marinate for 20-30mins.

  4. In a stew pot for pressure cooking, saute onions till soft.

  5. Add in ribs and carrot / daikon and pressure cook on high mode for 30mins - at the last 10-12mins, add in pineapples.

  6. Once it’s done, pour sauce into a small saucepan and let simmer till it thickens.
